I've done this with Word and PowerPoint lately and it works well. Also, there is a "printer" in Vista which will save as XPS (XAML subset). Acrobat Pro 8 and GhostXPS (http://www.artifex.com/indexxps.htm) are supposed to be able to convert XPS to PDF pretty easily. I haven't tried converting XPS to PDF but it should be really easy.
